Project summary

The aim of the project is the development of new meat products and specialties from horsemeat with improved nutritional value for perse preventive purposes.

The project objectives are to solve health problems related to inadequate nutrition and develop product list s and expand the range of horsemeat products and specialties for preventive purposes to compete in the world market.


Kyrgyzstan has one of the lowest life expectancy levels, 64 for men and 73 for women. The death rate in Kyrgyzstan is almost 1.5 times higher than the average European level. The high level of death and disease caused by nutritional imbalance is related to the inaccessibility of many valuable foodstuffs and medicines. The high profitability of horsemeat processing, through grazing herds of horses and the increasing interest of many countries where horsemeat has not been used as food prove the demand for processing horsemeat products. The number of horses in Kyrgyzstan is more than 1,000,000 and has sustainable growth (20,000 head per year), which is creating a sustainable source of raw material for horsemeat processing.

In such conditions it is necessary to develop new products for consumer groups with different income levels with double effect: regulation of nutritional imbalance and preventing diseases of the cardiovascular system, intestines, digestive and respiratory systems etc.

Many years of research results from MSUAB and KSTU scientists and other project participants prove that horsemeat is an ideal raw material for processing for preventive purpose products. The dietary and food value of horsemeat is in its persity of vitamins, mineral substances, organic acids that improve the metabolism of patients with adiposity, atherosclerosis and diseases of the cardiovascular system, liver and pancreas diseases and anemia. Horses' immunity to some infectious and invasive diseases and the high iron content of horsemeat (8 mg in 100gr meat) has enabled doctors in France and Italy to recommend raw horsemeat to people suffering from tuberculosis, anemia and retarded albuminous growth. Horsemeat contains high-grade fiber (18.5gr per 100gr of meat). Compared to beef, the content of irreplaceable amino acids in fibers are much higher in horsemeat. Horsemeat fat is very valuable. It contains 61-65 % of unsaturated fat acids (compare to 38.5 % in beef). The fat melts easily and is easily assimilated, reducing bladder action. Finally, it is an essential food element.

One of horsemeat’s features is the small content of cholesterol and atherogen and active non saturated fat acids. The cholesterol content of horsemeat is only 12-60 mg %, and in beef 75-100 mg %. Horsemeat supplies the body with lots of vitamins of various groups: “B”-0, 16-4.7mg %, “E”-0.82mg %, “A”-20mg % and “C”-0.8mg %, whereas, vitamins of “A” and “C” groups are present in beef as traces. The biological value of horsemeat is defined by a significant number of macro and microelements; 1 kg of horsemeat contains (mg), Fe-80, Cu-0.45, Al-0.114, Zn-0.684, Na-0.114, Cr-0.115, Ni-0.15 and others.

Project participants offer their own promising new kinds of horsemeat products that are highly profitable to produce, which will use simple and low cost technological facilities and improved preventive qualities as compared to existing traditional products.

Thus, the project basically consists of the set of technological measures, providing more efficient utilization of commercial and medical potential of the horsemeat meat products.

The Project is based on scientific works and inventions of project participants:

  • State standard of KR KMS 749-97 Kulazyk smoked meat products covers the production of smoked, dried horsemeat products;
  • Patent N 809 “Meat salting methods”, application N 20040075.1 describes different methods of horsemeat salting;
  • Patent N 808 “Mixture for meat injection during salting”, application N 20040076.1 describes different mixtures of saline solutions used for salting;
  • Patent N 1142091 “Production methods of meat products”, application N 3576800 gives the technical breakdown of horsemeat and yak specialties;
  • Scientific works and articles (See Attachment 1).

Suggested technological methods and recommendations with regards to the technological possibilities, preventive effects and implementation costs are unique. Using the recommended technology increases product yield by 8-12% by using more rational treatment methods and new kinds of raw materials. The integrated approach to horsemeat production considering the peculiarities, market demand and need to solve social problems related to the high sickness rate and unemployment avoids the disadvantages of existing technological methods.

The suggested system of methods and recommendations easily fits with the market changes, as well as medical requirements for preventive measures against the above-mentioned diseases.

Kulazyk, one of the recommended products has the following characteristics: high nutritional value, calorie content and ease of preparation for eating. In addition, it can be stored for a long time as is and does not aid obesity and is high-calorie and simple to prepare. These characteristics allow it to be considered as a promising food for mountaineers and rescuers working in highlands and this means there is a sustainable market demand for such a product. Its potential effect has not yet been investigated, but data based on interviewing consumers show its high potential in disease prevention.

The Project is based on the long-term experience of scientists, achieved in the process of creating technological methods of meat treatment, the study of preventive properties, production of tinned and extended storage products, including military, rescuers and pilots' rations.

The project comes under the category - “Technology development”- the technologies for 6 (six) new products from horsemeat were tested and developed by experiments. Implementation of the projects will allow the technologies to be adapted to industrial production, starting mini-processing and conducting research proving the preventive value of the products.

The implementation of the project will allow Kyrgyz and Russian scientists - experts involved previously in projects related to designing nutritional diets for the military, workers working in high levels of radiation and patients with radioactive contamination to continue research into developing a range of preventive products for peaceful purposes, to solve national and international medical problems. The project will encourage the integration of Kyrgyz and Russian scientists into the international scientific community and help solve national problems of poverty alleviation by creating new jobs in agric-processing and decreasing death rates from diseases, the prevention of which will be made easier when the new products will appear in the market in the quantities planned during the project. Project activities and expected results will meet the requirements of ISTC activity

The highly qualified experts of three institutions; the Kyrgyz State Technical University, the Moscow State Academy of applied biotechnology and the Independent Food Inspection Body will execute the project.

Implementation of the project: the purpose is to solve the following main tasks:

  1. Develop health-giving meat products from horsemeat in order to prevent many diseases
  2. Develop original horsemeat specialties and their production;
  3. Develop a horsemeat products product list;
  4. Modernize existing mini-processing using advanced technological equipment;
  5. Experimental processing of health-giving horsemeat meat products and specialties for preventive purposes and develop recommendations for wide application and clinical tests.

The main project results to be achieved:
  • The set of scientific-technical documents (GOST, TU, TT) is developed on the production of horsemeat products for preventive purposes with the approval of all inspection levels;
  • A horsemeat products for preventive purposes product list is created;
  • Advanced mini-equipment is installed and mini-processing of horsemeat meat products is started.

The obtained results will be the basis for industrial processing of horsemeat meat products for preventive purposes, which will allow doctors to expand preventive measures concerning many diseases, create a consolidated product list of the technological system of production and receipt of horsemeat meat products and it will also be the basis for commercial cooperation between all interested scientists and organizations.
