Project summaryToday the production of dry acidified milk preparation (acidophillous, lactobacterine, etc.) for medical, veterinary and food industry demands is carried out, using the technology of sublimation dehydration under vacuum of initial liquid materials. This technology allows producing preparations of high quality, but it has essential shortcoming due to high cost of equipment and processing. Parallel with it the data are available, that some acidified milk preparations can be manufactured by spraying method with high keeping of bacteria viability [1, 2]. So, survival of Streptococcus fecium culture reached 70 % at drying on spray dryer with temperature at the outlet of chamber 35°C. These data testify that drying of acidified bacteria on spraying units is possible.
However, standard spray drying units do not allow to accomplish efficient drying at 25-40° C temperature at the outlet of a chamber due to sufficiently high humidity content of air, that is supplied into drying unit. In order to produce the required effect, the preliminary dehumidification of air is necessary before its supply to a drying unit. In principle, application of dehumidification jointly with spray drying unit allows to accomplish closed cycle of air movement and to exclude completely effluents into environment.
Data available on the results of drying of acidified milk preparations on spray units relates to extremely limited series of preparations, that are mainly used as a ferment at siloing of feeds. In order to determine the range of application of spray method of drying it is necessary to provide experiments with more wide range of preparations. Since the drying is carried out in air medium, it is necessary to select specific protection media, containing antioxidants and also additives, enhancing xero-resistance of bacteria and improving the process of drying.
For a first time the works on spray drying of acidified milk preparations were carried out in the Institute of Applied Biochemistry (now JSC Biochimmash) in 1984-1986 under leadership of Ovechkin P.M.
The project is prepared, taking into account recommendations, stated in the report «Biotechnology Key Capabilities and Commercial Requirements» (§3.2. p.23) from 09.06.95, under direction of O.Lomacky.
Aim of the proposed project: Creation of industrial technology of dry acidified milk preparations' production (acidophillous, lactobacterine, etc.) by spray method of drying from liquid state.
Main goals of the study to solve the problem mentioned:
- to develop (to select) the design of air dehumidifiers and to equip (additionally) with them the spray drying units available;
- to make assessments of damaging factors at spraying of bacterial suspension on air-atomizing burner and disk sprayer;
- to provide the choice of protection media and modes of spray drying of acidified milk preparations;
- to produce experimental batches of acidified milk preparations to assess their stability while storage;
- to make feasibility study of drying method developed as compared with freeze-drying method.
For the first time the possibility of drying of the wide range of acidified milk preparations' by spray method will be determined.
Importance of the problem:
Performance of this project will allow to widen the production of dry acidified milk preparations' for medical, veterinary and food aims, that today is restrained due to expensiveness of equipment and high power expenditures at freeze-drying method.
As a result of project implementation, there will be chosen: component composition of protection media for drying of acidified milk preparations (acidophillus, lactobacterine, etc.), modes of drying; there will be developed recommendations on choice and additional equipment of spray drying unit, including unit with closed cycle of air movement and there will be developed industrial production technology of dry acidified milk preparation by spraying method of drying.
Commercial application of project results is confirmed by possible interest of such companies as: Celgene, Asahi Chemical Industry, Carrington Laboratories, CPC International, Warner-Lambert, mentioned in the report «Biotechnology. Key Capabilities and Commercial Requirements» (§3.2. p.23) from 09.06.95, prepared under direction of Dr. O.Lomacky.
